@psuboujeeb: I haven’t been feeling the greatest lately, but thankfully, I’m not dealing with anything even remotely contagious. When I heard about a little girl who just turned TWO and needed a birthday cake, I couldn’t say no. 🥹💕 And since we’re making the filling from scratch, I figured I’d share the recipe with you! This strawberry compote is thick, packed with real strawberry flavor, and stabilized with cornstarch so it holds up well between cake layers. Also delicious in cupcakes, pastries, cheesecakes, or spooned over pancakes and waffles. Prep: 10 minutes Cook: 12–18 minutes Yield: Approximately 1½–2 cups INGREDIENTS 1 lb (16 oz) fresh or frozen strawberries, hulled and diced ⅓ cup granulated sugar 1 Tbsp lemon juice 2 Tbsp cornstarch 2 Tbsp cold water ½ tsp vanilla extract (optional) Pinch of salt STEP-BY-STEP INSTRUCTIONS 1. Prepare your strawberries. Wash and hull your strawberries, then cut into small pieces. Smaller pieces work particularly well for cake fillings because they make it easier to spread the compote evenly between layers. If you’re using frozen strawberries, there’s no need to thaw them first. Just allow a little extra cooking time. 2. Start cooking. Add the strawberries, granulated sugar, lemon juice, and salt to a medium saucepan. Cook over medium heat for approximately 6–8 minutes, stirring occasionally. 3. Reduce the liquid. Continue simmering uncovered for another 3–5 minutes. Use a spoon or potato masher to break down some of the strawberries. I like leaving a few small chunks because they give the filling a wonderful texture. The mixture should begin reducing as some of the excess moisture evaporates. 4. Make your cornstarch slurry. In a separate small bowl, combine: • 2 Tbsp cornstarch • 2 Tbsp COLD water Whisk until completely smooth. Make sure you use cold water! Adding cornstarch directly to hot strawberries can cause clumps. 5. Thicken the compote. While stirring the simmering strawberries, slowly pour in your cornstarch mixture. Continue stirring as the mixture returns to a gentle bubble. Cook for another 1–2 minutes, until the compote becomes noticeably thicker and glossy. It should mound slightly on a spoon instead of running off like a thin syrup. Remember, it will thicken even more as it cools! 6. Add the vanilla. Remove the saucepan from the heat and stir in the vanilla extract, if using (I always do!) 7. Cool completely. Transfer the compote to a shallow, heat-safe container. Allow the initial steam to escape, then cover and refrigerate promptly for approximately 2–3 hours, or until completely chilled. Do NOT put warm compote between cake layers. It can soften your frosting and cause the layers to shift. 8. Use your filling! For layer cakes, pipe a thick ring of buttercream around the outer edge of each cake layer. This is called a buttercream dam, and it helps keep the filling exactly where you want it. Spoon the chilled strawberry compote inside the ring and spread it evenly, keeping the filling slightly below the height of the buttercream. Add your next cake layer and repeat! For my 8-inch chocolate cake, I’ll be using approximately ½ cup of filling between each layer. STORAGE 🍓 Refrigerate in an airtight container for up to 5–7 days. 🍓 Freeze for up to 3 months. 🍓 Thaw overnight in the refrigerator before using. 🍓 Keep cakes containing this filling refrigerated. A FEW HELPFUL TIPS 💕 Taste your strawberries before cooking. If they’re particularly tart, you can add a little more sugar. 💕 For a smoother filling, mash the strawberries more thoroughly as they cook 💕 Always let the filling cool completely before adding it to cakes or cupcakes 💕 Don’t skip the buttercream dam when making a layered cake I’m hoping to make something really special for this little girl, and I can’t wait to see how it all comes together. Stay tuned and follow along to see the finished cake! #strawberry #cake #birthday #baking #yummy
