Are you making Jambalaya? I was Stationed at NAS New Orleans for 4.7 years and that was my favorite Cajun Dish next to Crayfish by the pound. I now live in Southern California where I retired from the Navy after 22 years and can't find any Cajun Restaurant but when I drive to Las Vegas there is a place in Vegas called NOLA'S and had a chance to talk to the owner for a very long time and when she said he lived by the Airport than I said in Kenner and she looked at me and laughed when she said only anyone who lived in Jefferson Parish, but I told her that Lived in Plaquemines Parish and got a big hug and dinner was on her. around Christmas we had just gotten back from El Paso and bought 6 dozen of the most delicious Tamales 🫔 from this Mexican Restaurant and they made Tamales daily. Then a week later we drove back to NOLA Restaurant in Las Vegas and gave her 2 dozen Tamales 🫔 and she put a dozen in the Oven and 45 minutes later as we were eating she sat down next to us and said she never ate any Tamales 🫔 that disappointed her until she ate 6 of that delicious Handmade Tamales.
