Crispy Cheesy Beef Taquitos 🌮🧀 Smoky ground beef, melty mozzarella and a creamy garlic pickle filling, all wrapped in crispy golden flour tortillas! Served with a fresh garlic coriander dipping sauce, these are perfect for an easy, flavour-packed dinner. #cookingtips Servings: 4 (8 taquitos) Prep time: 20 minutes Cook time: 15–20 minutes Ingredients: For the beef filling 500g ground beef (beef mince) 1 large onion, finely diced 3 garlic cloves, minced 1 tbsp olive oil 1 tbsp smoked paprika 1 tsp ground cumin 1 tsp chilli flakes 1 tsp onion powder 1 tsp garlic powder ½ tsp dried oregano 1 tbsp tomato purée 1 tbsp chipotle paste 60ml beef stock Salt and black pepper, to taste 2 tbsp chopped fresh coriander 1 tbsp lime juice For the creamy garlic pickle filling: 100g cream cheese, softened ½ tsp garlic powder 1 tsp lime juice 50g pickles, finely chopped A pinch of salt 1–2 tsp water, if needed For the taquitos: 8 flour tortillas 150g grated mozzarella Oil, for brushing or spraying For the avocado dipping sauce: 2 tbsp mayonnaise 3 small garlic cloves 1 avocado, ripe 1 tbsp lime juice 2 tbsp fresh parsley Salt and black pepper, to taste 1–2 tsp water, if needed 👩🏻‍🍳 Instructions: 1. Make the creamy garlic pickle filling: Mix the cream cheese, garlic powder, lime juice, chopped pickles and salt until smooth. Set aside. 2. Cook the beef: Heat olive oil in a pan and sauté the onion for 3–4 minutes. Add the beef and cook until browned. Stir in the chopped garlic, smoked paprika, cumin, salt, chilli flakes, onion powder, garlic powder and oregano. 3. Add the tomato purée and chipotle paste, then pour in the beef stock. Simmer for 3–5 minutes until the liquid has mostly evaporated. Stir in the lime juice and coriander, then let the beef cool slightly. 4. Assemble the taquitos: Warm the flour tortillas until flexible. Spread a thin layer of the creamy garlic pickle filling down the centre, then add the beef and grated mozzarella. Roll tightly and place seam-side down. 5. Cook until crispy: shallow-fry over medium heat until golden and crispy. Ensure the filling is piping hot. 6. Make the dipping sauce: Mix the mayonnaise, avocado, garlic, lime juice and parsley. Season with salt and pepper, adding a little water to thin if needed. 7. Serve: Arrange the crispy taquitos on a plate, garnish with fresh coriander and serve with the garlic coriander dipping sauce. Cooking tips ✨ Warm your tortillas first to prevent them from cracking when rolled. Let the beef cool slightly before assembling to avoid making the tortillas soggy. Don't overfill the tortillas, and always place them seam-side down. Use a light coating of oil for a golden, crispy finish in the air fryer or oven. Cook in a single layer so the taquitos crisp evenly. Serve immediately for the best crunch and gooey melted cheese.
