Maple-Soy Salmon with Sesame Bok Choy
Recipe (serves 4)
Ingredients
* 4 salmon fillets, about 6 oz each
* ¼ cup low-sodium soy sauce
* 3 tbsp maple syrup
* 1 tbsp rice vinegar
* 1 tsp grated ginger
* 1 garlic clove, grated
* 2 tbsp neutral oil, divided
* 4 baby bok choy, halved lengthwise
* 1 tsp toasted sesame oil
* 1 tsp sesame seeds
Directions
1. Mix the soy sauce, maple syrup, vinegar, ginger, and garlic. Set aside 2 tbsp in a clean bowl for finishing. Brush the salmon with some of the remaining glaze.
2. Heat 1 tbsp neutral oil in a skillet over medium heat. Place the salmon skin-side down and cook for 4–5 minutes. Turn and cook for another 3–5 minutes, until cooked through. Brush with more glaze as it cooks; discard any glaze that touched raw salmon.
3. In a second skillet, heat the remaining 1 tbsp oil over medium-high heat. Place the bok choy cut-side down and sear for 2–3 minutes. Add 2 tbsp water, cover, and steam for 2 minutes.
4. Drizzle the bok choy with sesame oil and sprinkle with sesame seeds. Plate with the salmon and spoon the reserved clean glaze over the top.
