Rinsing rice before cooking removes loose surface starch, helping the grains cook with less stickiness and clumping. It can also wash away dust and small debris left from processing, making it particularly useful when preparing fluffy basmati or jasmine rice. Place the rice in a bowl, cover it with cold water, gently swirl and drain, repeating until the water looks less cloudy. However, some dishes, such as risotto, benefit from retaining starch, and rinsing enriched rice can remove added nutrients. Check the packet instructions, as the best approach depends on the rice and the texture you want.
