Knead everything except the butter for 8 min, then add the butter and knead until smooth. Let rise for 30 min, divide into 8 buns and rest for 20 min. Apple Filling: 480 g apples 40 g butter 85 g sugar 3 g cinnamon 1 tsp lemon juice 1 g salt 5 g cornstarch + 1 tbsp water → Cook apples with butter, sugar & spices until soft. Thicken with the cornstarch slurry and let cool. Cream Cheese Filling: 225 g cream cheese 55 g sugar 1 tbsp flour ½ tsp vanilla 1 tsp lemon juice → Mix until smooth. Crumble Topping: 23 g butter 23 g sugar 15 g brown sugar 38 g flour ⅛ tsp cinnamon → Rub together until crumbly. Vanilla Drizzle: 4 tbsp powdered sugar 1-2 tsp milk ¼ tsp vanilla → Mix until smooth.
