A RECIPE A DAY UNTIL 100K - DAY #12: Vodka Hasselback Potatoe Bake 🥔🥫🌶️  These served alongside a medium-rare steak and a parmesan rocket salad on a Sunday night were a HIT, to say the least. SAVE THE RECIPE & FOLLOW FOR DAY #13👇 Ingredients - 9 x Potatoes - 15 g x Butter - 10 g x Olive Oil - 10 g x Garlic, minced - 1/2 x Onion, finely diced - 60 g x Tomato Paste - 1–2 tsp x Chilli Flakes - 40 mL x Vodka - 250 mL x Cream - 45 g x Parmesan, grated - Salt & Pepper to taste - Fresh parmesan, to serve Method 1. Preheat the oven to 200°C fan-forced. 2. Cut thin slices into each potato, stopping before cutting all the way through to create the hasselback effect. 3. Steam the potatoes until softened but still holding their shape. 4. Meanwhile, melt the butter and olive oil in a pan over medium heat. Add the onion and cook until softened, then add the garlic and cook for another minute. 5. Stir through the tomato paste and chilli flakes, then add the vodka and simmer for 1–2 minutes. 6. Reduce the heat and stir through the cream and parmesan. Season with salt and pepper, then simmer until the sauce has thickened slightly. 7. Place the potatoes in a baking dish and pour the vodka sauce over the top, making sure it gets between the slices. 8. Bake uncovered for 25–35 minutes, or until the potatoes are golden and crispy on top. 9. Finish with fresh parmesan before serving. Alternative method: Starting with raw potatoes If you prefer not to steam the potatoes first, you can cut them and place them straight into the baking dish with the pre-cooked vodka sauce. Cover tightly with foil and bake until the potatoes are tender, approximately 45–60 minutes, depending on their size. Remove the foil and continue baking for another 20–30 minutes, or until the potatoes are golden and crispy.
