@rajaandrani61: 🦪 New England Clam Chowder Servings: 6 | Prep Time: 15 mins | Cook Time: 30 mins | Total Time: 45 mins 🥣 Ingredients Base & Aromatics: - 4 slices bacon, diced - 1 medium onion, finely chopped - 2 celery stalks, diced - 2 leeks, white and light green parts only, sliced and rinsed well - 3 cloves garlic, minced - 2 tbsp all-purpose flour - 1 cup dry white wine (or extra broth) Broth & Cream: - 2 cups clam juice (bottled, or reserved from fresh clams) - 2 cups chicken broth or seafood stock - 2 cups heavy cream - 1 bay leaf - ½ tsp dried thyme - Salt and black pepper to taste Vegetables & Seafood: - 3 medium potatoes (Russet or Yukon Gold), peeled and cubed - 1.5 kg (3 lbs) fresh littleneck or Manila clams, scrubbed clean - ¼ cup fresh parsley, chopped For Serving: - Buttery round crackers or oyster crackers   👩‍🍳 Instructions 1. Cook the bacon: In a large heavy pot or Dutch oven over medium heat, cook bacon until crispy — about 5–7 minutes. Remove bacon with a slotted spoon and set aside; leave the bacon fat in the pot. 2. Sauté veggies: Add onion, celery, and leeks to the bacon fat. Sauté for 5–6 minutes until soft and translucent. Add garlic and cook 1 more minute until fragrant. 3. Make the roux: Sprinkle in the flour and stir constantly for 2 minutes to cook it out. Slowly pour in the wine, stirring constantly until smooth. 4. Build the soup: Stir in clam juice, chicken broth, bay leaf, and thyme. Bring to a gentle simmer. Add potatoes and cook 12–15 minutes until just tender. 5. Cook the clams: Add the clams to the pot. Cover and simmer on medium-low for 6–10 minutes until the shells open wide. Discard any clams that do not open. 6. Finish it off: Stir in the heavy cream and cooked bacon. Simmer gently 3–4 minutes more — do not boil after adding cream! Season generously with salt and pepper. Remove the bay leaf. 7. Serve: Ladle into bowls, sprinkle with fresh parsley, and top with plenty of buttery crackers. Enjoy! 😋🦪 - Clean clams well: Scrub shells and soak in cold salted water for 20 minutes to remove sand - No wine? Just replace with extra broth + 1 tsp lemon juice - Make ahead: Tastes even better the next day — flavors get a chance to meld together! ✨  #ClamChowder #NewEnglandChowder #fyp #viral #FoodTok
