INGREDIENTS: ● Medium potatoes – 1–2 pcs ● Eggs – 4 pcs ● Tomato, finely diced (seeds removed) – 1 pc ● Ham, finely diced – 50–60 g ● Grated mozzarella cheese – 150 g ● Vegetable oil – 3–4 tbsp ● Salt – to taste INSTRUCTIONS: 1. Peel the potatoes and slice them into thin rounds, about 1–1.5 mm thick. 2. Heat the vegetable oil in a frying pan over medium heat. 3. Arrange the potato slices across the bottom of the pan in an even layer. 4. Fry until lightly golden, then carefully flip the potato slices and cook the other side. 5. Beat the eggs with salt in a bowl. 6. Pour the egg mixture evenly over the potatoes. 7. Remove the seeds from the tomato, dice it finely, and sprinkle it over the eggs. 8.
