The trick to red velvet is not too much Cocoa, and it needs to be red enough, but without too much coloring, because then you will taste it. You have to use the gel kind. A box of instant pudding mix in the batter is also a wonderful trick to add moisture. 🥰🥰

I never used to rate red velvet & then I perfected my recipe over the years & have a deep appreciation for it!!😍 also created a biscoff cream cheese frosting to pair with it- Incred & such a crowd pleaser with my customers✨✨

red velvet is the only cake i like. the key is to make sure it’s super moist and doesn’t have too much cocoa powder. you want a wet batter that uses at least some oil as the fat. lots of buttermilk & also vinegar. take it out when a skewer comes out with a few crumbs stuck to it. you must make cream cheese frosting, the best recipe ive found for the uk is from janes patisserie and it basically uses a ratio of 2:1:1 with the cream cheese being the 2. make sure you use enough salt but not too much & also a tablespoon of vanilla. you shouldn’t really have to use more than 20-30g cocoa (30g is pushing it)
