Cheesy Ground Beef & Potato Casserole Everyone Will Want Seconds Of! Tender sliced potatoes, seasoned ground beef, creamy sauce, and plenty of melted cheddar come together in this hearty, comforting casserole. Ingredients 6 medium russet potatoes, peeled and sliced 1/4-inch thick 2 lbs ground beef 1 medium yellow onion, sliced into half circles 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp smoked paprika 1/4 tsp dried oregano 2 (10 oz) cans cream of soups (cream of chicken, cream of celery, or cream of mushroom) 1 cup beef broth 1/2 cup milk 16 oz shredded cheddar cheese, divided Directions Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray. Peel and slice the potatoes to 1/4-inch thickness. Place them in a microwave-safe bowl, cover with wet paper towels, and microwave for 1 1/2 minutes. Stir and repeat until the potatoes are par-cooked and easily pierced with a fork. Brown the ground beef with the sliced onion in a large skillet over medium-high heat. Drain the excess grease. Season with salt, black pepper, garlic powder, onion powder, smoked paprika, and dried oregano. Stir in the cream of soups, beef broth, and milk until well combined. Turn off the heat. Layer half of the potatoes in the prepared baking dish. Add half of the meat mixture and half of the cheddar cheese. Repeat with the remaining potatoes, meat mixture, and cheddar cheese. Cover tightly with foil and bake for 45 minutes. Remove the foil and bake for another 30 minutes, until the potatoes are tender and the cheese is melted and golden brown.
