Carrot cake muffins with zero flour? 🥕 Grate two carrots into a bowl with oats, eggs and a little raw honey, and you get soft, moist muffins that taste like carrot cake. Zero flour, zero refined sugar, and the oats are the kind of fiber your gut likes. Carrot Cake Oat Muffins Makes: 6 muffins What you need: • 2 large carrots, finely grated (about 1 1/2 cups, loosely packed) • 1 cup old-fashioned rolled oats • 2 large eggs • 1/4 cup raw honey • 1 teaspoon ground cinnamon • 1 teaspoon baking powder • 1 teaspoon oil or butter, for greasing the tin How to make it: 1. Heat the oven to 350°F. Grease 6 cups of a standard muffin tin well, or grease paper liners. 2. Blend the oats in a blender for 20 to 30 seconds, until they look like coarse flour. 3. Grate the carrots on the small holes of a grater into a bowl. Measure them: you want about 1 1/2 cups. 4. Mix in the ground oats, eggs, honey, cinnamon and baking powder until no dry spots remain. 5. Let the batter rest 10 minutes so the oats soak up the liquid and it thickens. 6. Stir once, then spoon the batter into the 6 cups, filling each about three-quarters full. 7. Bake 22 to 25 minutes, until the tops are golden and spring back when pressed and a toothpick in the middle comes out clean. 8. Cool in the tin for 10 minutes, then lift them out and let them finish cooling on a rack. For best results: let the muffins cool 10 minutes in the tin before lifting them out. Eggs and oats set as they cool, and hot ones break apart.
