For the long videos, I’d love a series or video that digs into the depth of the balance in Japanese cuisine. Japanese recipes are measured, delicate and balanced, which helps to attain close to perfection when it comes to taste and consistency. In the west, of course we have recipes, but none can compare to the mindful thinking and complex yet gentle taste of Japanese recipes. As a western woman (with a Japanese husband) for years I have tried to learn this fine balance in ingredients and flavours, but it’s VERY hard. When he explains things to me, it does make sense, but we haven’t been raised to know about these things, so it’s hard to recreate. I’d love an episode where you talk about how important it is to keep bases, sauces, marinades and recipes simple, yet somehow, totally complex, comforting and most of all - perfectly balanced, all while using mostly the same base ingredients, but simply adjusting the quantities or cooking style to create a wide range of authentic home cooked meals. To finish, thank you for this series - well done for finishing! I cooked pretty much every dish along the journey!
