@ilenenasnutrition: Don’t tell your Middle Eastern mom about this shortcut 🤫😂 These spinach fatayer (spinach pies) are one of my FAVORITE things to keep stocked in the freezer! Using frozen dinner rolls makes them SO much easier without having to make dough from scratch. 🥬 Ingredients (makes ~15 pies): * 15 frozen Rhodes dinner rolls * 1 lb frozen chopped spinach * 1 medium white onion, finely diced * 2–3 cloves garlic, minced * 1 tbsp olive oil * 1 tbsp sumac (optional) * ½ tsp salt, or to taste * ¼ tsp black pepper, or to taste * ½–¾ cup crumbled feta cheese (optional) 👩🏻🍳 Instructions: 1. Thaw Rhodes dinner rolls and allow to rise according to package directions. 2. Heat olive oil in a skillet and sauté onion until softened. Add garlic, frozen spinach, salt, pepper, and sumac. 3. Cook until ALL excess moisture evaporates. This is key to preventing soggy pies! Allow to cool, then mix in feta if using. 4. Flatten each dough ball into a circle, add 1–2 tbsp filling, and pinch the edges together to form triangles. 5. Bake at 450°F for approximately 10–15 minutes, until golden brown. ❄️ Freezer prep: Cool completely, transfer to freezer-safe bags, and freeze. Reheat straight from frozen in the air fryer until warmed through and soft! I originally made these for my sister-in-law’s postpartum freezer stash, but obviously had to save a few for myself. 😂 Would your mom approve of the frozen dough hack?! #SpinachFatayer #MiddleEasternFood #FreezerPrep #SpinachPies #DietitianRecipes

I tried this before and let the dough thaw in the fridge overnight. It puffed up too much and made it harder to handle. Do I just take the package out of the freezer and let it thaw and rise on the counter for an hour or two?

I’ve tried that and it’s not the same. The dough tastes like a dinner roll, not the homemade bread dough momma makes.

My mouth is watering; I make mine very sour but without sumac…lemon pepper, lemon juice and citric acid. So yum.

This also works with samosa filling & pirozhki filling. I'm a big fan of veggie-filled hand rolls for 2nd meal. I'd love a selection of them, spiced & flavored from different cuisines
