Crispy Air Fryer Pork Belly Banh Mi + Leftover Fried Rice Serves 4–6 Made with Coles 100% Australian fresh pork belly — crispy, flavour-packed and perfect for making one roast go across two easy dinners. @Coles @australianpork Ingredients Pork belly 1.3kg Coles 100% Aussie fresh pork belly 2 tsp Chinese 5 spice 1 tbsp sesame oil Sea salt, for the skin Banh mi Fresh banh mi rolls Pâté Mayonnaise Hoisin sauce Cucumber, sliced Pickled carrot Fresh coriander Leftover pork fried rice Leftover pork belly, chopped 1 brown onion, diced 1 Coles family pack microwave rice Frozen mixed vegetables 2 eggs ¼ cup soy sauce ¼ cup oyster sauce 1 tbsp neutral oil Method: 1.Pat the pork belly dry with paper towel and slice in half lengthways. Rub the meat with Chinese 5 spice and the skin with sesame oil, then generously season the skin with sea salt. 2.Air fry skin-side up at 200°C for about 60 minutes, or until the skin is crispy and the pork is cooked through. Rest before slicing. 3.Slice the pork and build the banh mi with fresh rolls, pâté, mayonnaise, hoisin sauce, cucumber, pickled carrot and coriander. 4.For the fried rice, heat oil in a large pan and scramble the eggs, then remove and set aside. Add the onion and cook until softened, then add the rice, frozen vegetables and leftover pork.
