🥬 GRANDMA LILLIAN’S PICKLED CABBAGE Grandma Lillian had 19 variations of this damn recipe 😂 Some used white vinegar, some used apple cider vinegar, some heated the brine, and some didn’t. So we picked the easiest one first! This is our first attempt at figuring out her version, one crunchy bite at a time. 💚 📝 This is our family recipe in testing. The brine measurements and storage method haven’t been verified for food safety. YOU’LL NEED • 1 clean, sterilized gallon jar with a lid • Red and green cabbage, cut into chunky wedges, enough to pack the jar • 1 large carrot, sliced • 1 red bell pepper, sliced • 6 garlic cloves, peeled and smashed • 1 jalapeño, sliced • ½ onion, sliced • 2 sprigs fresh dill • 2 tablespoons whole black peppercorns • 2 large jarred grape leaves packed in brine, rinsed VERY well • 3 tablespoons kosher salt, plus additional salt for soaking the cabbage • 3 tablespoons sugar • White distilled vinegar • Room-temperature filtered water LET’S MAKE IT 🥬 1. Prep the cabbage. Remove any damaged outer leaves. Cut the cabbage into chunky wedges, leaving a little core attached to keep each wedge together. Place in a large bowl, sprinkle with additional salt, and cover with cold water. Let soak for 15 minutes, then rinse thoroughly and drain. 🧄 2. Start layering. Add half the peppercorns, half the garlic, 1 dill sprig, and 1 grape leaf to the jar. Pack in a layer of cabbage, followed by half the carrot, bell pepper, jalapeño, and onion. Sprinkle in half the measured salt and sugar. 🥕 3. Repeat. Layer in the remaining ingredients, packing the cabbage snugly while leaving room for the brine. 🫙 4. Grandma’s brine notes. Her instructions say to pour in white distilled vinegar until it reaches a little over ¼ of the packed jar, then add room temperature filtered water to cover the vegetables. Close the lid and gently shake to combine. ❄️ 5. Grandma’s storage notes. Her original method says 2 days in a cool, dry place, followed by 2 days in the refrigerator before enjoying. Make sure to keep refrigerated until they are all gone! #FamilyRecipe #Pickles #PickledCabbage #EasyRecipe #cabbage
