@onceuponapesto: Chia seeds were considered powerful long before they appeared in modern smoothie bowls. In the Mayan language, chia means “strength.” The tiny seeds were associated with stamina and used in religious practices, while mushrooms also carried deep cultural and symbolic meaning. Mushroom motifs discovered among Mayan ruins reveal just how far their significance extended. Those two ingredients inspired my Mushroom and Chia Pesto. Fresh basil, mozzarella, honey and olive oil bring everything together in a savory, nut-free blend that takes only minutes to make. I love this recipe because it connects an ancient history with a familiar kitchen process. Ingredients are crushed, combined and transformed, which is the real foundation of pesto. Tomorrow, I’ll share one of the two Mayan-inspired recipes in Once Upon a Pesto that uses this blend. Save the recipe, then share it with the person who puts mushrooms in absolutely everything.
