you dont touch the throttle when double clutching if you are the syncs will get messed up

That's not what most cars use. Constant-mesh transmissions are almost exclusively found on motorcycles with their sequential transmissions where they also use dogs and not synchronizer rings, not in normal road cars. road cars just use a normal gearbox that is not constant mesh, and does not use dogs

we need a manual box with hydraulic synchros so they don't wear as much over time - there are a few that already use atf instead of gear oil, might as well run with that and fit a stator-like mechanism in place of each synchro 🫪
