Pumpkin Olive Oil Cake Ingredients: 3 large eggs, beaten 2 cups granulated sugar 12 ounces EVO , excellent quality 10 ounces oatmilk 6 oz pumpkin puree 2 ½ cups AP flour ½ tsp baking soda ½ tsp baking powder 1 tsp kosher salt Method: Preheat the oven to 350 degrees F. In a large bowl, whisk together the eggs, sugar, olive oil, milk and pumpkin. Sift together the flour, baking soda, baking powder, and salt. Mix the dry mixture into the wet mixture. Whisk until well blended. Pour the mixture into the oiled pan or cake mold. Bake for 20-30 minutes depending on your oven. Place on a rack to cool.
