A soft, warmly spiced ginger pudding soaked in a rich, buttery cream sauce. Serve warm with vanilla custard for a comforting dessert. ### Ingredients ### For the ginger pudding * 85 g butter or margarine, softened * 135 g white sugar * 170 g golden syrup * 8 g ground ginger * 5 g ground cinnamon * 1 large egg * 210 g self-raising flour * 250 ml buttermilk ### For the rich buttery sauce * 200 g white sugar * 50 g butter or margarine * 250 ml cream * Pinch of salt ### To serve * Warm vanilla custard * Extra sauce for drizzling ### Method 1\. Prepare the oven. Preheat the oven to 165°C. Grease an ovenproof baking dish. 2\. Cream the ingredients. Beat the butter, sugar and golden syrup together until light and well combined. 3\. Add the spices. Beat in the egg, ground ginger and cinnamon until evenly incorporated. 4\. Finish the batter. Sift in the self-raising flour and add the buttermilk. Mix until smooth, taking care not to overmix. 5\. Bake. Pour the batter into the prepared dish. Bake for approximately 50 minutes, or until a skewer inserted into the centre comes out clean. 6\. Make the sauce. While the pudding bakes, combine the sugar, butter, cream and salt in a saucepan. Heat over medium heat, stirring until the sugar dissolves and the sauce is smooth. Avoid boiling vigorously. 7\. Soak the pudding. Remove the pudding from the oven. Pierce the surface all over with a fork and slowly pour most of the hot sauce over it, allowing it to soak into the sponge. 8\. Serve. Serve warm with vanilla custard and drizzle over the reserved sauce. ### TidyingTastes tips * For the best texture: Pour the sauce over the pudding while both are hot. * For extra ginger flavour: Add a little finely grated fresh ginger. * Make ahead: Reheat individual portions gently and warm the remaining sauce separately. * Serving suggestion: Vanilla ice cream also pairs beautifully with this warm pudding. #recipes #EasyRecipe #baking #dessert #comfortfood
