Hey girl. When it’s gummy it’s underproofed. Make sure you’re starter is strong and let the dough rise long enough! It’s harder than the internet lets on!

They look amazing for first time. They definitely look underproofed which explains the dense/chewy texture so next time leave to rise longer in bowl and also in banneton 🤍 they look WAY better than my first sourdough though 😅

Well done! Small tip needs to be baked a tiny bit longer for the first bake. Then take the lid off. The 1st bake should result in a darker exterior then when you take the lid off it’s to crunch it up
