Because restaurant mayo is actual real mayo like Hillmans or Dukes and not that nasty Miracle Whip fake shit that you probably have in your fridge Miracle Whip is not real mayo Miracle Whip is actually a sandwich spread I guarantee it says sandwich spread somewhere on the container

they use a heavy duty mayo like a sysco premiere more egg to oil less sugar and the premieres usually have seasoning like below, to copy buy a southern-style retail brand like duke’s mayonnaise its thicker whisk a tiny tiny splash of extra white vinegar, a pinch of salt, a dusting of mustard powder, and a micro-pinch of paprika directly into the cup of mayo before putting it on your sandwich or salad spread
