The perfect dinner as we wait for these high temps to dwindle down! ▢ 1 large red onion ▢ 1 large red bell pepper ▢ 1 large yellow bell pepper ▢ 1 large orange bell pepper ▢ 2 medium zucchinis ▢ 10 oz cherry tomatoes ▢ 1 lb baby red potatoes ▢ 1 lb baby yellow potatoes ▢ 4 meat free Italian sausages ▢ Salt and pepper, to taste ▢ Fresh basil, to garnish ▢ Fresh thyme, to garnish 1. Preheat oven to 425F. Lightly oil. 2. Cut onion into eight parts. Remove membrane from bell peppers then cut each into four pieces. Slice zucchinis into medium slices. Halve potatoes. 3. Place vegetables on tray along with sausages. Drizzle olive oil on top. Sprinkle on salt and pepper. Garnish with thyme and basil. 4.
