Buffalo Chicken Mac & Cheese 🧀 🔥 Ingredients Chicken: 3 chicken breasts, seasoned with: Paprika Garlic powder Onion powder Salt & pepper 2 tbsp olive oil Pasta & Sauce 2 cups uncooked pasta 1 tbsp chicken bouillon (added to boiling pasta water) Salt (for pasta water) 4 tbsp butter 4 tbsp flour 1 tbsp garlic powder 1 tbsp onion powder 1.5 tbsp paprika Salt & pepper to taste 1¾ cups milk 2 cups heavy cream 1½ cups mozzarella 1½ cups Monterey Jack 2 cups sharp cheddar ½ cup buffalo sauce Instructions: -Boil the pasta in water seasoned with chicken bouillon and salt. Cook until al dente, then drain and set aside. -In a pot over medium-high with olive oil, cook the seasoned chicken breasts until they reach 165°F. Remove, set aside, and dice. -Lower the heat to medium. In the same pot, melt the butter. Add the flour and whisk for about 30 seconds. -Add garlic, onion powder, paprika, salt, and pepper. Whisk for a couple of seconds to bloom the spices. -Slowly pour in the milk while whisking, then add the heavy cream. The sauce should be silky and smooth -Add half of each cheese (save the rest for layering). Stir until smooth and creamy. -Turn off the heat. Add the cooked pasta, diced chicken, and buffalo sauce. Mix well -In a baking dish, layer mac and cheese, cheese, mac and cheese, then cheese on top. Bake at 350°F for 25 minutes. -Broil for a few minutes to brown the top, watch it closely so it doesn’t burn #chicken #macandcheese #lunch #dinner #homemade
