@christi.simple.suppers: Fall is in the air, and that means SOUP SEASON! 🍂 This Chicken Bacon Ranch Potato Soup is loaded with tender chicken, potatoes, crispy bacon, ranch seasoning, and plenty of creamy, cheesy goodness! Best of all, the crockpot does most of the work! CHICKEN BACON RANCH POTATO SOUP Servings: 6 Prep Time: 10 minutes Cook Time: 7 hours INGREDIENTS: 1½ lbs Boneless skinless chicken breasts 1 bag (28 to 32 oz) Frozen diced hash brown potatoes OR 2 lbs Yukon Gold potatoes, diced 4 cups Chicken broth 1 packet (1 oz) Ranch seasoning mix 1 tsp Garlic powder ½ tsp Onion powder ½ tsp Black pepper 8 oz Cream cheese, cubed 1 cup Heavy whipping cream 2 cups Sharp cheddar cheese, freshly shredded ½ cup Real bacon pieces, divided DIRECTIONS: 1. Add chicken, diced potatoes, chicken broth, ranch seasoning, garlic powder, onion powder, and black pepper to the crockpot. Stir gently. 2. Cover and cook on LOW for 6 to 7 hours, until the chicken reaches 165°F and the potatoes are tender. 3. Remove chicken, shred with two forks, and return to the crockpot. 4. Add cream cheese and heavy whipping cream. Cover and cook on LOW for another 20 to 30 minutes, stirring occasionally until smooth. 5. Stir in shredded cheddar cheese and ¼ cup bacon pieces. Allow cheese to melt gently. 6. Mash some of the tender potatoes against the side of the crockpot and stir back into the soup to thicken naturally. 7. Serve topped with remaining bacon and extra cheddar cheese, if desired. TIP: Use frozen diced hash browns, NOT shredded, for tender bites of potato. Fresh diced Yukon Gold potatoes work great, too!
