AD prawn, spring onion & sticky soy udon stir-fry 🍤 got the formula for a PERFECT stir-fry, using my faves @Lee Kum Kee Europe dark & light soy for the ideal ratio you’ll need: 2 tbsp light soy + 1 tsp 1 tbsp dark soy 1 tsp sesame oil 2 tsp honey/brown sugar 1 tsp black vinegar 1 tbsp water 1 tsp corn flour 2 garlic cloves, finely grated 1 thumb ginger, finely grated 6 spring onions, roughly chopped 2 pak choi, roughly chopped 200g peeled & cleaned fresh tiger prawns 400g fresh udon noodles 1. Marinate the prawns in 1 clove of garlic, 1/2 tsp soy sauce whilst you prepare the rest of the dish 2. In a small bowl, whisk together the light & dark soy, sesame oil, sugar, water & cornflour until well combined 3. Chop all the veg into desired sizes and set aside 4. Boil fresh udon for 1-1.5 minutes until cooked bouncy. Drain and set aside 5. Heat a wok/pan on high heat and add in 2 tbsp of oil 6. Once hot, add in the prawns and sauté for 1.5 minutes on each side until caramelised and turned pink. Take prawns out of pan and set aside 7. Add the pak choi and spring onions into the same pan, do not touch for 45 seconds so it slightly chars and then mix until the other side is also charred 8. Add in the garlic and ginger and stir fry for another minute 9. Add in the udon and stir fry again for another minute 10. Finally pour in the pre prepared sauce and prawns, fry for another minute until prawns are fully cooked through and the sauce is glossy and coating the udon well #stirfryrecipe #prawnstirfry #stirfryideas #stirfrysauce #udonstirfry
