Creamy Cucumber Bacon Ranch Salad Ingredients: 🥗 Salad Base 🥒 English cucumbers: 3 large (or 4 medium Persian cucumbers), thinly sliced 🥓 Thick-cut bacon: 8 slices, cooked until extra crispy and chopped 🧅 Red onion: 1/2 medium, peeled and thinly sliced into half-moons 💚 Fresh dill: 3 tablespoons, finely chopped 🧀 Cheddar cheese: 1 cup, sharp cheddar, freshly shredded (optional) Creamy Ranch Dressing 🤍 Sour cream: 1/2 cup (full-fat preferred for rich texture) 🤍 Mayonnaise: 1/3 cup (real mayonnaise) 🤍 Heavy cream or buttermilk: 2 tablespoons (to loosen dressing) 🤍 Ranch seasoning mix: 1 packet (1 ounce / ~3 tablespoons) or homemade dry ranch mix 🤍 Garlic powder: 1/2 teaspoon 🤍 Onion powder: 1/2 teaspoon 🍋 Fresh lemon juice: 1 tablespoon 🖤 Freshly cracked black pepper: 1/2 teaspoon 🫙 Sea salt: 1/2 teaspoon (adjust to taste) Step-by-Step Instructions: Step 1: Prep and Salt the Cucumbers Wash the cucumbers thoroughly. Leave the skin intact for color and texture, or peel in alternating strips for a decorative look. Using a mandoline slicer or sharp knife, slice the cucumbers into 1/8-inch uniform rounds. Place the sliced cucumbers into a colander set inside a bowl or over the sink. Toss with 1/2 teaspoon of salt. Let the cucumbers drain for 10 to 15 minutes. This step draws out excess water so your salad dressing doesn’t get watery. After draining, pat the cucumbers thoroughly dry with paper towels. Step 2: Cook and Crisp the Bacon Place the bacon slices in a cold skillet over medium heat. Cook for 8 to 10 minutes, flipping occasionally, until the bacon reaches a deep golden brown and is extra crisp. Transfer the bacon to a paper-towel-lined plate to drain away excess grease. Once cool enough to handle, chop into bit-sized pieces. Step 3: Prepare the Creamy Ranch Dressing In a small bowl, whisk together sour cream, mayonnaise, and heavy cream (or buttermilk). Add the ranch seasoning mix, garlic powder, onion powder, fresh lemon juice, and freshly cracked black pepper. Whisk vigorously until smooth and completely combined. Taste and add salt if needed. Step 4: Assemble the Salad In a large mixing bowl, combine the dried cucumber slices, thinly sliced red onion, chopped dill, and shredded cheddar cheese (if using). Pour the creamy ranch dressing over the ingredients. Toss gently with a spatula or tongs until every cucumber slice is evenly coated with dressing. Fold in 3/4 of the chopped crispy bacon, reserving the remaining 1/4 for garnish. Step 5: Chill and Serve Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes. Chilling allows the flavors to meld and deepens the ranch infusion. Just before serving, give the salad a quick toss. Top with the reserved chopped bacon and an extra sprinkle of fresh dill or black pepper.
