@huttongirlshomestead: Cheesy Smashed Potatoes Boil potatoes until fork tender, then cut to be able to fit in a muffin tin. Add a little olive oil to each well, then add potatoes. Use a cup to smash each potato, then add a little more olive oil and a slice of cheese. Bake on 350 until cheese is melted and golden. Top with some fresh parsley.
