Steps: - Remove flesh from coconut. Freeze and save for oven baked coconut chips. - Sand shells till smooth. - Rinse and boil shells for at least 10 minutes. Let dry. - Toast cloves, cardamom, and cinnamon. Grind into powder. - Slice jaggery into small slices. This helps quicken the melting process. - Start melting the jaggery with water on very low heat. It will take about 10-12 minutes to dissolve fully. - As the jaggery melts, add the spice powder and a pinch of salt. - Once fully dissolved, strain and set aside. Let it cool. - Beat eggs until just combined. - Grate nutmeg into eggs. Helps neutralize the egg smell. - When jaggery syrup is warm to the touch, gently mix inn beaten eggs. - Mix in coconut milk. Beat until well combined. - Strain custard through fine mesh sieve. - Apply a thin layer of coconut oil on dried coconut shells. - Place coconut shells on cookie rings or anything that holds them upright. - Pour custard into shells until just under half filled. - Cover shells with aluminum foil. - Steam for about 1.5 hours in a large pot. Ideal steam time heavily depends on the thickness of shell and steam intensity. Toothpick inserted to the bottom of shell should come out clean when custard is set. - Rest on wire rack and cool completely. - Refrigerate for 6 hours and take out 20 minutes before serving. - Garnish with roasted cashews and mint leaves.
