ONE PAN CREAMY COCONUT CURRY 🥥🌶️🍋‍🟩 This one is sooo good!! You’ll just need some coconut milk and a few spices (you’ll probably already have) to make the most amazinggg warming curry sauce which I just find sooo cosy and comforting at this time of year. It’s healthy, packed with protein and full of goodness 🫶🏼 Ingredients: 3-4 chicken thighs or 2 breasts 1 pepper 1 onion 4 cloves garlic 2cm piece ginger 1 green chilli (optional) 3tsp curry powder 1tsp turmeric 2tsp chilli powder (optional, or use less) Salt Pepper Olive oil Rice (I use veetee cos it’s just easier) 1 tin reduced fat coconut milk 1tbsp fish sauce 1/2 lime 1tsp sugar Method: Season the chicken in 1tsp curry powder, 1/2 teaspoon turmeric, a little chilli powder, salt and pepper. Add a little oil. Add the chicken to a hot pan, with a little oil and sear on each side for 3-4 minutes or until golden. Remove and set aside. In the same pan, add the onion and cook until softened. Then add the garlic, ginger, chilli and remaining spices and cook until fragrant. Add the chopped pepper and coconut milk then simmer on low for around 30 minutes. Add fish sauce, lime and sugar. Taste and season more if required. Serve over fluffy rice and enjoy!♥️ #EasyRecipes #healthyrecipes #highproteinmeals #curry #chickencurry
