@thehungrytruffle: Creamy tomato & whipped ricotta pasta 🍝🍅🧀 the perfect way to use trader joe’s whipped ricotta! // recipe ⬇️ Ingredients: 8 oz pasta (mafalde corte) 1 package cherry tomatoes 1/2 cup whipped ricotta + plus extra for topping 1/4 cup parmesan cheese Olive Oil Salt & black pepper Red pepper flakes Onion powder Garlic powder Instructions: - Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1 cup of pasta water. - Heat olive oil in a large pan over medium heat. Add the cherry tomatoes and season with salt, black pepper, red pepper flakes, onion powder, and garlic powder, to taste. - Cook for 8–10 mins, stirring occasionally, until the tomatoes burst and become jammy. Gently crush the tomatoes to release their juices. - Reduce the heat to low.
