Basically don't wash it with water and soap. We brine with vinegar and lime, and sometimes salt, let it sit for a bit, there's a huge difference

It's not about not being careful or being unsanitary, it's because most people don't realise that washing poultry, especially under running water, can cause the bacteria to become aerosolised, meaning it spreads like an invisible mist over almost all surfaces close to your sink. Then when people wash up after cleaning the chicken, they will clean the sink and the taps etc but they wont clean their entire worktop or their cupboards or walls. washing chicken is essentially a language barrier. Eurocentric folks think we all are talking about running chicken under water, but that's not it. Washing it involves some type of acid that breaks down elements on the outside and usually soaks. Most cultures use a giant bowl to do this.
