@rachbecookinn: SOUP SEASON EP. 4: spicy vodka gnocchi soup + crispy Italian sausage 🍅✨ I feel like I say this every time I make soup… but this is my new favorite soup. If you love vodka pasta, you NEED to try!!! SOUP * 1 lb spicy Italian sausage, casings removed * 1 tbsp olive oil, if needed * 1 shallot + ½ yellow onion, diced * 5 garlic cloves, minced * ⅓ cup tomato paste * ½ cup crushed tomatoes (more to taste) * 1–2 tsp Calabrian chili paste * ½ tsp dried oregano * ⅓ cup vodka * 4 cups chicken broth, plus more as needed * ½–1 tsp Better Than Bouillon chicken base * Parmesan rind (optional) * ¾ cup heavy cream * ½ cup freshly grated Parmesan * 16 oz potato gnocchi * Salt + black pepper * 1–2 tsp lemon juice (optional) LEMONY WHIPPED RICOTTA * ½ cup whole milk ricotta * 1 tbsp Parmesan * ½ tsp lemon zest * 1–2 tsp olive oil * Salt + pepper TOPPINGS Fresh basil, crispy sausage, Parmesan + chili oil METHOD 1. Brown sausage in large chunks over medium-high heat, pressing into the pan for crispy edges. Break apart, cook through, then remove, reserving 1–1½ tbsp fat. 2. Sauté shallot + onion 4–5 min. Add garlic + oregano for 1 min, then tomato paste + Calabrian chili. Cook 3–5 min until deep red. Deglaze with vodka and simmer 2–3 min. 3. Add broth, chicken base, Parmesan rind, crushed tomatoes + most of the sausage. Simmer 12–15 min. 4. Meanwhile, whip ricotta with Parmesan, lemon zest, olive oil, salt + pepper until smooth. Remove rind from soup, reduce heat and stir in cream + Parmesan. 5. Add gnocchi and gently simmer 2–4 min until tender. Thin with broth if needed; finish with lemon juice to taste.
