🥟 Mini Potato Samosas — 30 pieces Samosa dough * All-purpose flour — 1 cup (125 g) * Salt — ½ tsp * Oil — 2 tbsp * Carom seeds (ajwain) — ½ tsp (if you used them) * Water — about ¼ cup, added gradually Knead into a firm, smooth dough. Cover and rest for 20–30 minutes. 🥔 Potato filling * Potatoes — 500 g * Cumin seeds — 1 tsp * Crushed coriander seeds — 1 tsp * Red chilli powder — ½ tsp * Chaat masala — 1 tsp * Garam masala — ½ tsp * Salt — ¾ tsp, or to taste * Fresh coriander — 3 tbsp, chopped Method 1. Boil potatoes until tender, then peel and roughly mash. 2. Heat a little oil and add cumin seeds. 3. Add green chilli and spices. 4. Add potatoes and mix well. 5. Cook for 2–3 minutes until the filling is dry. 6. Turn off the heat, fresh coriander, and mix. 7. Let the filling cool completely. Shape & fry Divide the dough into small portions, roll thinly and cut/shape into mini samosa wrappers.
