Here's my thought, and it's been my thought since we learned of the circumstances of the Avatar situation in this show. The twins, they aren't born from the reincarnation cycle, but much like how the air nomads came back due to Korra's actions with letting the spirit world into the human world. The avatar was born the same way. She's born in a time of need.......not a want.

The time increased due to rava Turing into ravatuu. Vatuu growing within rava is changing how the cycle works, allowing 2 avatars ,increasing the span of which the cycle happens. Vatuu & Rava are the same but because they represent different concepts they’re in constant conflict. An example is like Kami & piccolo in og dragon ball

She could have learned the ability to slow aging like Kyoshi… maybe the third spirit portal being opened / her being blasted with the spirit beam extended her life. Who knows… I can’t wait to find out! I think Vatu reemerged, she sacrificed herself to “save” the world, and both Vatu and Raava were reincarnated.
