Boil the potatoes. Peel the potatoes, cut them into chunks, and boil them in salted water until tender. Drain all the water and mash the potatoes thoroughly until smooth and free of lumps. Let them cool slightly. 2. Prepare the mashed potato mixture. Add salt, black pepper, and 3 tablespoons of starch to the mashed potatoes.
