@inkedbyanad: There's so much that had to happen to get me where I'm at today, I'm by far perfect. I do not have it all together, I'm still learning very hard lessons, I struggle from time to time, 1 go through mental breakdowns every so often, I have anxiety attacks, I suffer from imposter syndrome, and I self sabotage at times thinking that I'm not living a life I deserve. It's not easy to believe sometimes that I'm not meant to struggle. It's easier to actually believe that I'II lose everything and be able accept that rather than any success I receive. 1 am learning everyday and sometimes I don't realize that the little girl in those pictures was given EVERY single reason to fail. She was given the ugliest things the world had to offer to make her fall, and statistically speaking I should either be in jail, homeless, or on drugs. But I mean I had to do something right, it landed me here. I really really don't have it all figured out but at least I didn't fall into my own statistic, and I'm learning I've beat the odds and that's more then enough to be proud of. Korean-style cheesy & spicy pork ribs recipe ⬇️ 2-3 lbs of pork backribs 1 tbsp black peppercorns 1 bay leaf 1-2 tbsp sugar 2 tbsp corn syrup 1/4 cup mirin (helps to off-set the porky smell) Additional seasoning: 2 tsp salt A pinch - 1/4 tsp msg salt (Found at most Korean/Asian grocery stores) 2-3 tbsp soy sauce (can add more towards the end if needed) 1/4 cup gochugaru (Korean red pepper flakes) 1 tbsp minced garlic 1/2 tsp ground ginger or 1 tsp fresh ginger Shredded mozz, Korean rice cakes (optional), green onions, and roasted sesame seeds 1. Slice the ribs and place them in a pot of water, ensuring the meat is fully covered. 2. Parboil the ribs with black peppercorns and a bay leaf 3. Once a layer of brown foam appears on the surface (usually after 10–20 minutes), turn off the heat and drain the water. 4. Gently rinse the ribs under cold water to remove impurities. Be cautious, as the ribs may still be hot after draining. 5. Remove any small bone fragments from the ribs during the rinse. 6. Transfer the ribs into a shallow pan, adding enough water to just fully cover them. 7. Stir in the sugar, corn syrup, and mirin 8. Bring the mixture to a boil. 9. Add the remaining seasonings, then reduce to a simmer for 30–40 minutes, or until the ribs are tender, leaving about 30–40% of the liquid remaining. 10. Taste and adjust the seasoning to your preference, adding more if necessary. 11. Add the rice cakes and simmer for an additional 10 minutes over medium-low heat. Add more water if needed, and adjust the seasoning if necessary. 12. Sprinkle mozzarella over the dish, then cover with a lid. Reduce the heat to low to allow the cheese to melt. 13.
