PORK KATSU (serves 2) 🍽️ • 2 boneless skinless pork chops, about 250g each and 2.5cm thick • 1.5g salt + white pepper • 50g flour • 1 egg, beaten • 80g panko • Neutral oil, about 4cm deep Season the pork, then coat it in flour, then egg, then panko. Fry at 160°C flipping every few minutes, until golden brown and 63°C in the center. Rest on a rack for 3 minutes. Katsu sauce • 40g ketchup • 35ml Worcestershire • 15ml oyster sauce • 12g sugar Warm everything just until the sugar dissolves. Sushi rice • 180ml uncooked Japanese rice, cooked • 25ml rice vinegar • 20g sugar • 2ml salt Cook rice as is. Mix and warm seasoning then pour onto the hot rice and top with sesame seeds. Apple cabbage slaw • 200g shredded cabbage • 1 julienned apple • 60g Japanese mayo • 10ml mirin • 15ml sesame oil • Toasted sesame seeds Serve with miso soup yummers 😋 #privatechef #japanesefood #tonkatsu #food #recipes
