Please don't give me a crustless quiche 🥲 When I saw boiled potatoes being used as a pastry alternative I thought it was a fantastic idea and it surpassed all my expectations 😍🔥 The plus side of using potatoes - more fibre, more micronutrients, lower fat and lower carb PLUS I used baby potatoes which digest a lot slower too (lower glycemic index than regular potatoes 🙌🏻) Give me a follow if you're a busy woman looking for more calorie conscious recipes that the whole family can eat too 🫶🏻 PS I can 100% confirm this is a great meal prep dish too - I may have packed some for a car lunch while in between after school extramurals 😌 LOVE, Gen X Ingredients: - 500g baby potatoes, halved boiled soft & cooled - 6 large eggs - 250g fat free plain smooth cottage cheese - 2 tbsp chives, finely chopped - 2 tsp olive oil - 200g round cut bacon - 200g baby spinach - 1/2 onion, diced - garlic (optional) - 100g fat free feta @Woolworths SA - 2 tsp salt - 2 tsp mixed dried herbs - 1 tsp black pepper Method: 1. Spray a round loose bottom cake tin with non-stick cooking spray, brush the oil all over. 2. Preheat the oven to 200'C. 3. Press the potatoes in the tin to cover the bottom very well. Make sure you press the potatoes around the edge of the tin to seal it so the egg mixture doesn't pour out. Season with 1/2 teaspoon salt 4. Bake the potatoes in the oven for 10 minutes, remove, set aside to cool. 5. Pan fry the bacon & cut into small squares. 6. In the same pan add the onion & spinach, cook down until the spinach is dry. 7. Whisk the eggs, cottage cheese, chives, dried herbs, remaining salt & pepper. 8. Add the bacon & spinach mix to the potatoes, pour over the egg mix, crumble over the feta. 9. Place on a baking tray (to catch any egg mixture if it leaks), bake for 45 to 50 minutes until set &firm to touch in the middle. 10. Remove from the oven, cool for about 5 minutes before serving. Garnish with extra chives. #thenourishkitchen #quiché #highproteinmeals
