Easy Funfetti Cupcakes ❤️💙💚🧡💛 Cake * 1 box white cake mix * 1 (3 oz) box instant vanilla pudding mix * 1/3 cup sour cream, at room temperature * 4 large eggs, at room temperature * 1 cup milk, at room temperature * 1/2 tbsp vanilla extract * 1/2 cup vegetable oil * Rainbow sprinkles, for the batter and topping Buttercream Frosting * 2 sticks unsalted butter, softened * 4–4 1/2 cups powdered sugar * 3–4 tbsp heavy whipping cream * 1/2 tbsp vanilla bean paste or vanilla extract * A pinch of salt Baking Temperature: 350°F Baking Time: 16–20 minutes Yield: A little over 18 cupcakes Instructions 1. Preheat the oven to 350°F and line your cupcake pans with cupcake liners. 2. Add the cake mix, pudding mix, oil, milk, vanilla extract, and sour cream to a bowl. Mix until the batter comes together. 3. Fold the rainbow sprinkles into the batter. Measure with your heart! ❤️ 4. Scoop the batter into the cupcake liners. I like my cupcakes kinda big, so I use about 2–3 tablespoons of batter per liner. 5. Bake at 350°F for 16–20 minutes, or until a toothpick inserted into the center comes out clean. 6. Remove the cupcakes from the oven and let them cool in the pan for 10 minutes. Then, remove them from the pan and allow them to cool completely. 7. To make the frosting, beat the softened butter for 3–5 minutes, then gradually add the powdered sugar. 8. While mixing, add the heavy whipping cream and vanilla bean paste or vanilla extract. 9. Add a pinch of salt to balance the sweetness. If using salted butter, skip this step. 10.
