@brighteyes847: Fragrant Lamb Biryani with Saffron-Infused Basmati Rice and Golden Caramelized Onions RECIPE-COOKING WITH BRIGHT EYES Ingredients: 750 g lamb shoulder, cut into bite-sized pieces 2 tablespoons vegetable oil 1 large onion, thinly sliced 3 cloves garlic, minced 1 tablespoon fresh ginger, grated 1 cup plain Greek yogurt 2 tablespoons lemon juice 2 teaspoons ground cumin 2 teaspoons ground coriander 1 teaspoon garam masala 1 teaspoon ground turmeric 1 teaspoon chili powder 1 teaspoon salt 1/2 teaspoon black pepper 2 cups basmati rice 3 cups water 1 teaspoon saffron threads 3 tablespoons warm milk 4 green cardamom pods 1 cinnamon stick 4 whole cloves 1 bay leaf 1/2 teaspoon cumin seeds 1/4 cup fresh coriander, chopped 1/4 cup fresh mint leaves, chopped 1/4 cup toasted almonds Salt to taste Directions: Place the lamb in a large bowl and combine with Greek yogurt, lemon juice, garlic, ginger, cumin, coriander, garam masala, turmeric, chili powder, salt, and black pepper. Cover and marinate in the refrigerator for at least 1 hour. Meanwhile, soak the saffron threads in the warm milk and set aside. Rinse the basmati rice under cold water until the water runs mostly clear. Soak the rice for 20 minutes, then drain. Heat the oil in a large heavy-bottomed pot over medium heat. Add the sliced onion and cook slowly for 12-15 minutes, stirring occasionally, until deeply golden and caramelized. Transfer half of the onions to a plate and reserve for garnish. Add the marinated lamb to the remaining onions in the pot and cook over medium-high heat for 6-8 minutes, stirring occasionally, until the lamb is browned. Add 1 cup of water, reduce the heat to low, cover, and simmer for 35-45 minutes, or until the lamb is tender and the sauce has thickened. While the lamb cooks, bring 3 cups of water to a boil in a separate large saucepan. Add the cardamom, cinnamon, cloves, bay leaf, cumin seeds, and a generous pinch of salt. Add the drained basmati rice and cook for 6-7 minutes, until the grains are partially cooked but still firm in the centre. Drain immediately. Remove the whole spices from the lamb mixture if desired. Taste and adjust the seasoning. Layer half of the partially cooked rice over the lamb. Sprinkle with half of the saffron milk, chopped coriander, and mint. Add the remaining rice and drizzle evenly with the remaining saffron milk. Cover the pot tightly with a lid and cook over very low heat for 20-25 minutes, allowing the rice to steam and absorb the fragrant lamb sauce. Turn off the heat and let the biryani rest, covered, for 10 minutes before opening the lid. Gently fluff the rice with a fork, taking care not to break the grains or completely mix the layers. Top with the reserved caramelized onions, toasted almonds, fresh coriander, and mint. Serve hot.
