Baigan ka Bharta Recipe Below 👇🏼 Ingredients: 2 large eggplants (baingan) 1-2 tbsp oil of choice (ghee, butter, canola, doesn’t matter) 1-2 large yellow onions, julienned 1 to 1½ tomatoes, chopped Thai green chilies (as many as you want, I do a large handful because I like it spicy) 1 tbsp red chili powder ½ tbsp cumin seeds (toast them first for extra flavour) 1 tsp turmeric Salt to taste 1 small piece of charcoal (for the smoke) Fresh chopped cilantro, for topping Black pepper, for topping Bread, for serving Instructions: For Roasting the eggplant: Gas stove: Roast directly over open flame, turning occasionally until skin is blackened and flesh is soft. Oven: Wrap in foil and bake at 380°F for an hour and a half to 2 hours Microwave (faster): Cook in 5-7minute increments until soft. In a pan, heat 1-2 tbsp ghee, butter or oil of choice Add julienned onions and fry until golden brown. Add chopped tomatoes and Thai green chilies. Cook for at least 5 minutes. Add red chili powder, toasted cumin seeds, turmeric, and salt to taste. Sauté for a couple of minutes. Once your eggplant is soft, cut it in half and scoop out the insides. Add the eggplant flesh to the pan. Cook for a few minutes. Heat a small piece of coal until red hot. Place it in a small bowl and set that bowl into the pan. Drizzle a little oil over the hot coal, it will smoke immediately. Cover the pan and let it sit. I do 5 minutes for mild smoke. Go longer if you want it punchy. Top with fresh cilantro and black pepper. Enjoy with bread. Convert an eggplant hater #Bharta #Eggplantrecipes #PakistaniFood #IndianFood #Deevaandfood
