Can never go wrong with BBQ chicken! Here’s how I made my plate: For the chicken, pat it dry, drizzle with olive oil, and season well. Add it to a cast iron skillet with onions and bell peppers. Cover with foil and bake at 350 for about 1 hour. Then uncover, baste with barbecue sauce mixed with a little brown sugar, garlic, and onion, bake uncovered for about 5 minutes. Flip the chicken, baste the other side as well, and bake for another 5 minutes so each side gets coated and caramelized. Finish under the broiler for a few minutes until the top is crispy and golden. The total cook time is about 1 hour and 13 minutes, and I keep it at 350 the entire time. For the potatoes, peel and slice them, then pat them very dry and season generously. I used cowboy butter Kinder seasoning. Place them in an oven safe dish and pour your homemade cheese sauce over the top. For the cheese sauce, melt a few tablespoons of butter, whisk in a little flour until smooth, then add about 1 cup of heavy cream and about 1 cup of milk (this is all approximate, just add enough depending on how much sauce you want). Stir in a couple handfuls of cheese, I used cheddar and mozzarella, season well, and let it simmer on low for about 10 minutes or until it’s smooth and creamy. Pour the cheese sauce over the potatoes, top with extra shredded cheese, and bake at 350 for about 1 hour and 20 minutes until everything is bubbly and golden. To keep your potatoes from getting greasy or watery, make sure you dry them really well after slicing since extra moisture will thin out the sauce. Don’t overdo the butter because the cheese already releases fat as it melts. Also avoid covering the dish while baking since trapped steam can make the potatoes watery instead of creamy and thick. #nostalgia #grandma #homecooking #EasyRecipe #recipeideas
