I just tear off the leaves of fresh basil and put in food processor. grind it , then add equal amount of Celtic salt (or any non-iodized salt). Process again. Spead evenly (thinly) on cookie sheet on parchment paper. Bake at 200° for 30 minutes until it dries in a sheet. Watch to see you are not baking the basil, you want to retain the color. Break up sheet and grind in processor again. It's a beautiful green color.

I have specific ice trays that I only use for chopped basil/ herbs and olive oil. Put them in zip bags for soups, sauces, gravy through winter.
