@kathryn_bruton: It's time to skip the overpriced shop bought soup and make your own with just 4 ingredients🥫 It is possible to have fast food at home, and when you have some soffrito and peas in your freezer, you have a knock out soup ready in minutes. The cream is optional, but worth it. If you don’t have cream a splash of milk will give the soup that little bit of added smoothness. Cook time: 10 minutes Makes: 2 portions Ingredients: 1 tbsp olive oil 50g frozen soffrito 375g bag of frozen peas 1 tsp vegetable bouillon (or use a stock cube to make 350ml stock) 50ml double cream (optional) Method: 1. Sauté the soffrito in the olive oil in a medium saucepan set over a medium heat for 3-4 minutes, until defrosted and softened. 2. Add the peas, bouillon powder and 350ml water. Simmer for 5 minutes, remove from the heat, add the cream and blend until smooth. Season to taste and serve with a drizzle of cream. The second portion will keep in the fridge for 4-5 days.
