Cooking a delicious meal like this after a busy work day is truly how I wind down and show myself some love; so I am so excited to partner with @knorr to bring you all the recipe for this One-Pot Pesto Orzo with Crispy Seasoned Chicken Thighs. Full recipe below! INGREDIENTS: - 1-2 lbs bone-in, skin-on chicken thighs - 2 tbsp Knorr Chicken Bouillon - 1 tsp each of salt and pepper - 1 tsp paprika - 1/2 shallot, diced - 2 cloves garlic, diced - 1 tsp red pepper flakes (add more or less depending on your spice tolerance) - 1 cup halved cherry tomatoes - 1.5 cups of dry orzo - 3 cups very warm water - 3 tbsp store-bought (or homemade) basil pesto - 1-2 tsps red wine vinegar - Fresh parsley to garnish INSTRUCTIONS: 1. Preheat oven to 450 degrees F. Trim excess skin off of chicken thighs and pat dry with a paper towel. Season chicken thighs with 1 tbsp of the chicken bouillon, salt, pepper, and paprika. 2. Sear the chicken thighs skin-side down over medium heat in a pan on the stove until the chicken lifts away easily from the pan and doesn’t stick. 3. Immediately remove the chicken from the pan and place on a wire rack on top of a foil-lined sheet pan. Bake in the oven for around 20-30 minutes until the internal temperature of the chicken reaches 165 degrees F. 4. While the chicken cooks, add the shallot to the pan and sauté for one minute. Then add the garlic and red pepper flakes and sauté for another 30 seconds. Add the cherry tomatoes and stir until they start to burst. 5. Add the orzo, stir to combine, and toast the orzo for 3 minutes, or until it starts to turn golden brown. 6. Combine the remaining 1 tbsp of the chicken bouillon with the warm water and pour in about half to the pan, constantly stirring until the liquid is fully absorbed into the orzo. Add the remaining water/bouillon mixture and continue stirring until the orzo is fully cooked. Add additional water 1/3 cup at a time if needed. 7. Turn off the heat, add the pesto and red wine vinegar. Stir to combine. Garnish with chopped fresh parsley and serve with the chicken thighs! #KnorrPartner #EasyRecipe #EasyRecipes #WeeknightDinner #WeeknightMeals
