@francescostrazzanti: Cicoria- Italian wild chicory or dandelion greens- mildly bitter, wonderfully healthy - and if you know how to prepare them well, incredibly delicious. This is one of my favourite ways to enjoy them... Ingredients for 2 portions: 2 small bunches cicoria 3-4 small potatoes 1 medium onion 1 handful black olives 1-2 anchovies 1 clove garlic Chili to taste 2-3 cocktail tomatoes Good extra virgin olive oil Remove the root ends of the cicoria and chop into bite-sized pieces. Wash thoroughly to remove soil and dirt. Peel and cut the potatoes into bite-sized pieces. Peel and coarsely chop the onion. Peel the garlic clove, but leave it whole so that you can remove it later. Add chili if you like a bit of heat- the dish really does taste better with it. If you are wary of it, leave the chili pieces a bit larger, so they will be easily visible and avoidable later. I used cocktail tomatoes today which are larger than cherry tomatoes. Any tomato will do and it only needs to be coarsely chopped. with this done, you're ready to start cooking. Boil the potatoes together with the cicoria in well salted water. This should only take 10 minutes or so. In the meantime, add a generous amount of good extra virgin olive oil to your frying pan, along with a couple of anchovies, the chopped chili and the whole clove of garlic. Bring the oil slowly up to temperature, so that it infuses with flavour, but so that the chili and garlic do not turn brown - or worse still, bitter Once the anchovies slowly begin to sizzle, give them a little stir and they will dissolve into the oil. At this point you can add the chopped onion. Cook on a moderate heat for 4-5 minutes until the onion becomes translucent. Now add a handful of black olives and continue frying together. Check on the potatoes and greens to see how they are coming along. As soon as you can easily prod the potatoes with a fork, they are done. Try not too overcook them! Drain the potatoes and greens and add them to the frying pan. Mix them well with the other ingredients and let all of the flavours combine and cook into them. Allow to re-fry this way for 2-3 minutes before serving. Finish with a final drizzle of your best extra virgin olive oil raw and enjoy! #EasyRecipes #italian #vegetables #cicoria #cooking
