In Dutch it is called Aardpeer. I ate it once, loved it, great taste........ but my intestines didn't like it. More farts than beans.

Jerusalem Artichokes in English and I've been eating them for 50+ years. They are related to Sunflowers and soup made from them is called Palestine soup.

Be careful, it's invasive, do some research before planting(whether it's native to your region).

If you don't cook them properly, or prepare them properly, they produce the gas issues and can run amok in gardens if not contained properly.

I wonder what kind of liquor you could make from it, given its unique property of breaking down into sugars once harvested 🤔

We eat those after pickle fermentation, no issues with gases as fermentation most likely causes the innulin chains to break into something easy to digest

I grew them in pots one year. huge harvest. delicious taste, something between artichoke and chestnut, beautiful nutty flavour, I liked to make soup of it. lasted for MONTHS in a zip loc bag in the fridge, but the reason I know they last so long is because they gave me such gas that I just didn't cook the rest of them after making like two soups. such a shame. I imagine they would help to reset your gut after a round of antibiotics tho.
