@christopherhopkins1: Garlic Parmesan Chicken Rotini in Melted Mozzarella Alfredo Sauce Ingredients: 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces 12 oz rotini pasta 1 tbsp olive oil 3 tbsp unsalted butter, divided 4 cloves garlic, minced 1 tsp garlic powder 1 tsp Italian seasoning 1/2 tsp smoked paprika 1/2 tsp salt 1/2 tsp black pepper 1 cup heavy whipping cream 1/2 cup low-sodium chicken broth 3/4 cup freshly grated Parmesan cheese 1 cup shredded low-moisture mozzarella cheese 1/2 cup reserved pasta water, as needed 2 tbsp chopped fresh parsley Directions: 1. Bring a large pot of salted water to a boil. Cook the rotini until al dente. Reserve 1/2 cup of pasta water, then drain. 2. Pat the chicken pieces dry with paper towels. Season with garlic powder, Italian seasoning, smoked paprika, salt, and black pepper. 3. Heat the olive oil and 1 tablespoon butter in a large frying pan over medium-high heat. 4. Add the chicken in a single layer and cook for 5–7 minutes, turning occasionally, until golden brown with lightly caramelized edges and an internal temperature of 165°F. Work in batches if needed. Transfer to a plate. 5. Reduce the heat to medium-low. Add the remaining 2 tablespoons butter to the same pan and let it melt. 6. Stir in the minced garlic and cook for about 30 seconds. Pour in the chicken broth and gently scrape up the browned bits left from cooking the chicken. 7. Add the heavy cream and let the mixture simmer gently for 3–4 minutes until slightly thickened. 8. Reduce the heat to low and gradually stir in the Parmesan cheese. Remove the pan from direct heat and add the shredded mozzarella in small handfuls, stirring until melted into the Alfredo sauce. 9. Add the cooked rotini and gently toss until the creamy mozzarella Alfredo sauce coats the spiral pasta. Stir in a little reserved pasta water as needed to keep the sauce smooth. 10. Return the golden chicken pieces and any resting juices to the pasta. Fold everything together gently until the chicken is evenly distributed throughout the creamy rotini. 11. Finish with chopped parsley and serve while the mozzarella Alfredo sauce is warm and creamy.
