Ingredients: • 1 medium yellow or white onion, diced • 2 garlic cloves, minced • 1½ cups white rice, uncooked • 4 cups chicken broth • 1 teaspoon salt • 2 pounds boneless, skinless chicken breasts, cooked and shredded (rotisserie chicken works great) • 1 pound fresh or frozen broccoli florets • 8 ounces grated cheddar cheese, plus more for topping • Salt and pepper, to taste Instructions: 1. Add onion, garlic, rice, chicken broth, salt, and cooked chicken to the bottom of your Instant Pot. 2. Seal the lid and turn the valve to SEALING. Set to MANUAL for 7 minutes. 3. Once done, carefully turn the knob to VENTING for a quick release. 4. While the pressure releases, steam your broccoli in the microwave for 4–5 minutes or on the stove (follow the package directions if using frozen). 5. Stir the broccoli and cheddar cheese into the Instant Pot mixture. 6. Add salt and pepper to taste. 7. Dish onto plates or bowls and top with extra shredded cheese if you’d like! ✨ Quick tip: If you’re using rotisserie chicken, wait to add it until you stir in the broccoli at the end so it doesn’t overcook. 🧀 I also accidentally doubled the cheese in my video… Creamy, cheesy comfort in every bite. Perfect for busy nights when you want something homemade but low effort. 🤍 #cookwithme #easydinner #easydinnerideas #comfortfood #pressurecooker
